Fish Tacos w/Cilantro Lime Slaw
6 Atlantic Cod
2½ tsp Chipotle Peppers in Adobe, Chopped
1½ tsp White Wine Vinegar
13/4 T Olive Oil
¹/8 tsp Kosher Salt
¹/8 tsp Ground Black Pepper
20 e Corn Tortillas
10 e Fresh Lime Wedges
Cilantro Lime Slaw
5 c Coleslaw Mix
¼ c Red Onion, Thinly Sliced
¼ c Red Bell Pepper, Sliced
3 T Lime Juice
1½ T Lime Zest
¹/8 tsp Kosher Salt
¹/8 tsp Ground Black Pepper
Fish Sauce
1 tsp Chipotle Peppers in Adobe
1½ tsp Jalapeno Pepper, Diced
½ tsp Fresh Parsley
3½ T Fresh Cilantro
¹/8 tsp Ground Black Pepper
7½ T Lite Mayonaise
2 T Water
Preheat oven to 350F.
In a bowl, combine peppers, lime juice, vinegar, olive oil, salt and pepper.
Rub fish with seasoning, let marinate for 2 hours.
Place cod on a sheet pan; bake for 15 minutes or until an internal temperature of 145F is reached.
Cilantro Lime Slaw
Toss together
Place all of the ingredients in a blender, puree until smooth.
Serve 2 tacos garnished with 2 lime wedges per serving.
