Next time you're in Salt Lake, head up to Emigration Canyon, and check out the Australian pies at Ruth's Creekside. This is a version of a pot pie with a pie crust shell and three different meat options: pulled pork, beef with mashed peas or chicken and bacon. And it's topped with a puff pastry.

Owners Erik and Tracy Nelson discovered the pot pies while visiting their daughter in Australia and wanted to bring them back home for people in Utah. So, when they opened Ruth's Creekside earlier this year, these items became one of their top specialties, which their customers love. You can eat them in the café or get them to go. Ruth's Creekside café is as complete a destination as they come with a Starbucks Coffee and fresh bakery along with pizzas, paninis and sandwiches … but Australian pot pies are the top-selling item.

In addition to the café, Ruth's Creekside is a convenience and liquor store serving the residents of Emigration Canyon. They carry basic items like eggs, milk, bread, Boar's Head packaged meats, fresh seafood and other meats. Residents are thrilled with the store because without it, the closest place to shop is about 8 miles away.

As the owners of Ruth's Diner, next door to Ruth's Creekside, Erik and Tracy are already very familiar with their target demographic. Their customer base is varied and includes locals as well as people who come back to the restaurant every year. Ruth's Creekside is operated in harmony with Ruth's Diner and sometimes has overflow when it gets busy.

Emigration Canyon remains one of Utah's most significant pieces of state history. It's where the pioneers first entered the Salt Lake Valley in 1847. Today it's also home to limited development and permanent residents, whom Erik and Tracy are serving with Ruth's Creekside, and the 22 employees on board.
