Think about what 77,000 pounds of Alaskan salmon looks like. It's a LOT of fish, to put it mildly, more than someone could eat on their own in 10 years. But for Gordon Flade and his team at Two River Smoked Fish, that represents a catch of just three weeks — a catch that will be used to operate Gordon's business for another year, until the salmon are running again.

Gordon believes the product they produce at Two River Smoked Salmon is the finest smoked salmon you'll ever taste because it's not dry, wet or briny. This is an established company he recently bought and is now working to scale. Gordon is also selling wild caught Alaskan Salmon, very possibly the best-tasting salmon in the world. Another part of Gordon's secret sauce is he doesn't use chemicals and brines to prep fish for smoking. The fish is smoked over Apple wood, for a smooth-flavored smoke finish.

They fish from the Kvichak (Kwi-jack) River in Bristol Bay, Alaska. It requires an intense fishing trip for Gordon and other family members once a year, but he feels the end result — the catch — is worth it. Of course you don't fish in Alaska without a bear story or two. Gordon tells about how once in the middle of the night, his son saw a bear about 25 feet back from the boat. It was knee deep in the water and smelling for fish. They started talking louder until the bear realized they were there, prepared to throw fish in case it was hungry. Instead, it stood up on its hind legs, at an impressive 8 to 9 feet, looked at them and then walked away, to the relief of all involved.

In addition to the smoked salmon, Gordon also sells trout through Two River Smoked Fish. Their rainbow trout comes out of Snake River Basin so you know it's fresh and local. These fish are raised using sustainable products and organics as much as possible. You can now find Two River Smoked Fish sold throughout the U.S.
