What can be more enjoyable than jumping in the car and driving through the beautiful Parley's Canyon to Echo, Utah to visit the Kozy Cafe, a classic, built in 1924? It's a great way to spend a summer morning or early afternoon.

This over 90-year-old landmark treasure, at 3525 Old Echo Rd in Echo, was originally owned Willa and Cora Dilloree (dill-oh-ree), as a true family-run restaurant, a tradition which Noe Rodriguez, who now owns it, plans to continue. Through his work at the Kozy Café, Noe is contributing to Utah's rural business community. It's important we support these companies that contribute to their local communities

Eight years ago, Noe Rodriguez bought the Kozy Cafe from the Dilloree family ... But he decided to add his own original touch, featuring a menu filled with American traditional food that carries a Spanish flare...It's a menu that appeals to a wide variety of tastes and of personalities...Motorcycle riders will sit right next to families and both will find something special on the menu they'll really enjoy.

Kozy Cafe offers homemade hamburgers, hash browns, omelets and milkshakes right alongside Mexican poletas, chicken fajitas and enchiladas ....Desserts include traditional cheesecakes, with pies and flan in the works...In other words, variety is the key here. Noe wants just about anyone to feel comfortable ordering off the menu, even if you just stop by for dessert and a cup of coffee...

Inside, the menu is filled with family recipes Noe learned from his mother and grandmother....A year ago he closed the Kozy Café down, renovated it from floor to ceiling and is now celebrating his grand reopening. Inside it's completely remodeled and looks gorgeous...

Noe plans to continue expanding his menu and features at the Kozy Café and creating new ideas to bring to anyone who takes the ride to Echo to share his vision....
