Greg left Texas behind when he came west to college. While in Utah, Greg and his fellow Texans would do big Texas barbecue throwdowns that grew to hundreds of people. Later, he and Sheri moved back to Texas for a few years, and she developed a taste for Texas barbecue. It was after they came back to Utah that they decided to share their passion through Huntsville Barbecue.

Brisket is the meat of choice in Texas, and that's what Greg takes the most pride in at Huntsville Barbecue. He uses what he calls an old school process with a steel pit smoker and wood he cuts himself to smoke all his meats. He uses native Utah oak, and that gives each meat a local flavor profile.

A distinctive part of true barbecue is the pink ring around the exterior of the meat, which signifies that it's truly been smoked. You'll see this with all the meats at Huntsville Barbecue. It's one of the reasons the Texas-style restaurant is growing every year.

The great part about their location in Huntsville, Greg says, is the year-round recreation of Ogden Valley. With three ski resorts nearby and Pine View Reservoir, Huntsville Barbecue hosts guests from all over the U.S. and the world in winter and summer. They have a United States map where diners can put pins to represent where they're from, and Greg says it's amazing how thick some of those areas are.

In the summertime, Huntsville Barbecue Company has outdoor seating. You can sit at the picnic tables under the trees listening to live music and enjoy the incredible Texas-style smoked meats, home-style sides like broccoli slaw, loaded mashed potatoes or Texas cream corn and fantastic made-from-scratch desserts.
