There were definitely changes afoot at Cucina Restaurant Group with head chef Valter Nassi retiring. Ken Millo (my-low), owner of this Salt Lake City classic, is clear they're working hard to take this iconic restaurant to the next level.

Many restaurants have a lifespan of about 10 years. Since 2012 represents the 10th anniversary for Cucina Toscana, Ken knew it was time to make some changes. So, with two new chefs on board, he's taking a targeted approach to changing the menu at Cucina Toscana. Elio Scanu, who owns a successful Italian restaurant in Ogden, is heading up this transformation.

Don't worry — your favorites will still be on the menu. Now there will just be new options to try with a focus on seasonality for special events as well as more food and wine pairing.

In addition to the redesigned Toscana, this group will now include two new restaurants, Vivace (vih-vah-chee) and Caterina. Vivace is a smaller version of Cucina Toscana with lighter, healthier meals like pork tenderloin wrapped in herbs or rotisserie chicken. It's already been well received by diners looking for tasty but more affordable and quicker Italian food. There's also a version of Vivace to open at the Salt Lake City International Airport. They were personally invited to open at the airport and with over 21 million passengers in 2011, that's significant.

Caterina is a French restaurant in Sugarhouse with seating for up to 250 people. Jean (john) Louis Montecot (mohn-tee-cot) is heading up this restaurant. It's an expansion of the Cucina Restaurant Group's banqueting company and will be available for private parties and banquets. They'll also be offering a light breakfast as well as lunch and dinner options. For the first time this year Caterina will also host a Thanksgiving brunch.

Ken is excited to watch this restaurant group take off and give Utah residents and visitors alike more fine dining options. With 10 years of goodwill built up, he feels confident Cucina Restaurant Group will remain a Utah destination.
