Sweet & Sour Porl

Yield 4 servings

Ingredients:
4 Tbsp. Oil, Canola Divided throughout the recipe. Pantry
1 Lb. Pork Cut in bite size Meat Department
T.T. Salt & White Pepper Add sparingly throughout the recipe.
1 Each Red Pepper Dice Large Produce
1 Each Green Pepper Dice Large Produce
½ Cup Water
½ Cup Rice Vinegar
½ Cup Sugar Pantry/Baking
1 Tbsp. Corn Starch A heaping Tbsp. combined with 2 Tbsp. water.
1 Inch Ginger Root. Grated, and use only the extracted liquid. Add this to taste
4 Cup Rice, Cooked Cooked in your favorite way

Directions:
1. Heat a heavy bottom pot. Add 2 Tbsp. of oil and heat it through.
2. Lightly season the pieces of pork with salt and white pepper and brown them in the hot oil.
3. When pork is browned, remove and reserve.
4. Incorporate 1 more Tbsp. of oil, add the peppers and sauté until the color of the peppers turn to very bright red and green. Remove and Reserve.
5. Immediately after, incorporate water, vinegar, and sugar. Mix and add the pork.
6. Let the mixture come to a boil and cook for about 3 minutes, just enough to let the pork cook, incorporate the corn starch, stirring constantly at the same time.
7. The sauce will thicken fast, season with salt, white pepper, and the ginger extract.
8. Serve in a bowl over hot steaming rice.
