'Cupcake Wars' contestant shares recipe

SALT LAKE CITY -- Tuesday night, Erik Larsen came in second place on the Food Network show Cupcake Wars.

He showed KSL viewers how to make some special cupcakes.

Churro Jack Cakes

2 1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon salt

1 1/2 cups sugar

1 1/3 cups vegetable oil

2 eggs

1 egg white

1 cup milk

1 teaspoon vinegar

3 teaspoons cinnamon

1 teaspoon vanilla

1 box of cracker jacks

Peanut butter butter cream frosting, recipe follows

Preheat the oven to 340 degrees F.

Line a cupcake or muffin pan with 24 cupcake liners. Whisk the flour, baking soda, sugar and salt into a large-size bowl. Set the bowl aside. In the bowl of an electric stand mixer, with a paddle attachment, mix vegetable oil, eggs, milk, and vinegar on low for about 30 seconds. Leave mixer on low speed and gradually add in the large-size bowl of dry mixture. Add cinnamon and vanilla with mixture and remove bowl from mixer.

Fill 24 cupcake liners 2/3 full with batter and bake for 20 minutes or until golden and baked through. Cool the cupcakes completely. Pan fry in quarter cup vegetable oil. Then, roll in quarter cup sugar 1 teaspoon cinnamon mixture.

Peanut butter butter cream frosting

4 ounces cream cheese

8 ounces butter

4 whole chopped peanut butter cookies (preferably Nutter Butters)

3 teaspoons creamy peanut butter

2 cups powdered sugar

In a food processor combine cream cheese, butter, peanut butter cookies, creamy peanut butter and powdered sugar and mix until creamy. Put the frosting into a pastry bag and cut 1/2-inch off the tip.

To assemble:

Generously frost the top of each cupcake with the peanut butter butter cream frosting mixture. Sprinkle chopped peanut butter cookies on top of the frosting. Then, place a cracker jack on top for garnish.
