Our friend Chef Vanina is cooking up some classic Italian food for us today. These are great snack for your kids after a school day.
Suppli con mozzarella (rice fried ball with mozzalrella)
-0.55 lb of rice Arborio
-0.33 lb of mozzarella cheese
-0.13 lb of parmesan cheese
-.017 lb of smoked ham
-3 eggs
-flour
-breadcrumbs
-oil
-salt
-pepper
Boil the rice until it's half cooked. Drain it, and pick it up in a large bowl with chopped mozzarella, finely chopped cooked ham, and two egg yolks. Mix well.
Add the grated cheese and work the dough so that it is hard and compacts well. shape it into elongated dumplings no larger than a walnut. Add flour, dump them in beaten egg, then add salt pepper and bread crumbs.
When all the rice balls are ready, fry them a few at a time in hot oil. Retire when they are golden brown, dry them on paper towels, and serve.
