Enjoy all the flavors fall has to offer this month. Oasis Cafe in Salt Lake City is now offering a three-course harvest dinner for just $25. Eat some of your favorite fall flavors during their special that end October 31st.

Oasis Café Mediterranean Tomato Sauce

Canned Diced Tomatoes- 1 cup

Capers- 4 Tablespoons

Kalamata Olives- 16 each

Roasted Red Onions (see recipe below)- 2 slices (rings)

Roasted Garlic Cloves- 8 each

Fresh Basil Leaves- 6 each

Canola Oil- 2 Tablespoons

PROCEDURE: In a large sauté pan heat the canola oil. When it is hot, add tomatoes for 2 minutes, then add olives, capers, onions, roasted garlic cloves and continue to cook on medium/high heat stirring constantly. Continue to cook for 5 minutes. Add basil and salt and pepper to taste. Remove from heat and place on top of roasted Tilapia (or other light fish).

Oasis Café Roasted Red Onions

Red Onions-3 each

Balsamic Vinegar- 1 cup

Canola Oil- 1 cup

Salt- ½ teaspoon

Pepper- 1 teaspoon

PROCEDURE: Peel onion skins and slice onions into slices about ¼ inch. Prepare a sheet tray with non-stick cooking spray (Pam). Lay onions out on tray. Mix the balsamic vinegar and oil together in a bowl. Pour vinegar & oil mixture over onions so that they are evenly coated. Place sheet tray in oven that has been pre-heated to 350 degrees. Allow to roast for 15 mins. Remove and allow to cool.
