Art and Soup is an annual event that celebrates culture, community, and cuisine, while raising money for the CNS Charitable Care Program.

Silver Fork Lodge came to show us what they'll be making at this year's event.

Chicken and Sausage Soup

2 gallon's chicken stock (best when home made but there are plenty of good store bought varieties)

1 medium onion, small dice

2 medium stalks, celery with leaves, small dice

1 small carrot, julienne

4 plump garlic cloves, chopped

1/2 cup fresh basil leaves, loosely packed, julienne

1/3 cup extra virgin olive oil

2 gallon's chicken stock

1 head escarole, about 1 pound, cut into 1/2 inch shreds

1 bunch escarole, about 1 pound, cut into 1/2 inch shreds

1 large fennel bulb, about 1 pound, trimmed and sliced 1/4 inch thick

1 pound zucchini, cut into 1/2 inch pieces (about 3 small zucchini)

2 lbs. sweet Italian sausage, crumbled

2 lbs. cooked chicken shredded salt and pepper to taste

Lightly saute all vegetables. Lightly brown sausage. Add all ingredients to stock. Simmer one hour. Adjust salt and pepper to taste. Top with grated Pecorino cheese when serving.
