Barbecued spareribs – the perfect March Madness meal

With the Utes heading to the Sweet Sixteen in the NCAA basketball tourney, the burning question — besides whether the Utes will beat the Duke Blue Devils — is what will you feed those hungry basketball fans tomorrow night?

How about serving savory spareribs? One of my favorite tricks is to wake up a little early in morning to prepare the ribs (it's worth it, I promise). That way they get to marinate all day and absorb the flavor of your delicious barbecue sauce. Then all you'll need to do is pop them into the oven and let it do all the work while you kick up your feet and watch your favorite team in action.

Barbecued spareribs – the perfect March Madness meal

Barbecued Spareribs

  • Serves 4-6 people
  • Prep time: 20 minutes
  • Cooking Time: 2 ½ hours
  • Total Time: 2 hours 50 minutes

Ingredients

  • 3 pounds country style spare ribs
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • ½ cup finely chopped celery
  • 1 medium onion, chopped
  • Salt and freshly ground black pepper

Sauce ingredients

  • 2 tablespoons vinegar
  • 2 tablespoons firmly packed brown sugar
  • 1 cup ketchup
  • 3 tablespoons Worcestershire sauce
  • 1 tablespoon prepared mustard
  • 1 cup water

Directions

1. In a large Dutch oven or heavy pot, add butter and oil. Liberally season the pork with salt and pepper.
2. Working in batches, add the pork and cook until brown on each side, about 5 minutes total. Transfer to plate and repeat process until all of your pork is cooked.
3. Add celery and onion to the pot and cook, stirring occasionally until tender and translucent, about 8 minutes.
4. Meanwhile, in a small bowl or measuring cup, combine vinegar, brown sugar, ketchup, Worcestershire sauce, mustard and water.
5. Return the pork to the pot and pour the sauce over the pork.
6. Cover the pot tightly and store in refrigerator until ready to bake.
7. Pre-heat oven to 350 degrees and bake until fork tender (approximately 1 ½ to 2 hours).
